Sophocles (Septem Brewery): “For me, the hops are the most important thing in a beer”

As part of the annual Partner Day, Bierothek® Magazine had the opportunity to meet Sophocles, the founder of the Septem Brewery. Of course, Bierothek® Magazine doesn't miss such an opportunity and conducted an interview with the likeable founder.

Bierothek® Magazine: Do you still remember your first beer?

Sophocles: Yes, that was the Septem Pale Ale and Septem Pilsner in 2009. I brewed it with a very good friend back then. My friend and I were winemakers and tried to brew a beer for the first time.

Bierothek® Magazine: What is your personal favorite beer?

Sophocles: I prefer IPAs and pale ales. I like it more hoppy and fruity. For me, hops are one of the most important things in a beer. I work a lot with different types of hops and always try to use the best hops in my beers.

Bierothek® Magazine: How and when did you finally come into contact with the topic of “beer”?

Sophocles: Until recently there were only one or two brands of beer in Greece. One day when I tasted a pale ale imported from America, I wanted to brew a beer like that here in Greece. At that time I was still working in the wine business, but gave it up in 2009 to brew beer.

Bierothek® Magazine: Which of your beers is the most popular with customers?

Sophocles: The bestsellers are the Sunday's Honey Golden Ale, the Monday's Pilsner and the Porter.

Bierothek® Magazine: What is the most unusual beer in your range?

Sophocles: There is currently no exceptional beer. However, our next beer will be something very special. It is bottled in retro bottles and the taste will pleasantly surprise you with its fruity nature.

Bierothek® Magazine: Does your brewery offer an entry-level beer? And which beer would you recommend to craft beer newbies?

Sophocles: For craft beer newbies, I would recommend the Septem Pale Ale. It is very fruity and has a mild taste. With this beer we worked a lot with flavors, which means that it is particularly suitable for beer newbies.

Bierothek® Magazine: What does it mean to you that the Bierothek® offers your beer in Germany?

Sophocles: It is very important for us that we can sell our beer in Germany through the Bierothek®. The Bierothek® gives us the opportunity to reach the right end customers as experts in this field. This expertise offers us the opportunity to increase our sales in Germany.
